Kim continued her theme of Southwestern Comfort Food through to her salad. I'd never had a salad like this before, and in general I'm only a fan of the Cool Ranch variety of Doritos. But this salad was unique, tasty and may have changed my position on regular Doritos.
SOUTHWESTERN SALAD
- 1 package leafy romaine lettuce, chopped (I buy the bag of prechopped)
- 1 can black beans, drained and chopped
- 1 red or green pepper, chopped
- 1 pint cherry tomatoes, sliced in half
- 1 avocado, chopped
- juice of one lime
- Doritos, small bag
- ½ cup mayo
- ½ cup sour cream
- ½ tbsp ranch dressing mix
- ½ tbsp taco seasoning mix
Toss together romaine,
beans, pepper, tomatoes, and avocado. Squeeze juice of one lime over top
and toss. Top with Doritos and serve with dressing.
