Miniature tomato sandwiches

Hopefully you saw my post last night that alerted you to the fact that this week I'll be posting lots of the recipes from Beach Week 2012. Today there are three posts going up, posts that highlight the dishes that Tiffany made on her night to cook.

This was one of the dishes from the beach that everyone RAVED about. Tiffany borrowed the recipe from her mother-in-law Beverly.

MINIATURE TOMATO SANDWICHES

  • ¼ cup mayonnaise
  • 1 3-ounce package cream cheese, softened
  • 1 tablespoon chopped fresh basil
  • ¼ teaspoon salt, divided
  • ¼ teaspoon pepper, divided
  • thin French baguette
  • 4 plum tomatoes, sliced

Stir together mayonnaise, cream cheese, basil 1/8 teaspoon salt and 1/8 teaspoon pepper; cover and chill 8 hours, if desired. Cut baguette into slices. Spread cheese mixture on baguette slices. Top with tomato, and sprinkle with remaining salt and pepper.



These would be perfect for a wedding shower, baby shower, take-along to a dinner to use as an appetizer ...  I actually already emailed this recipe to a couple of blog readers who requested it as soon as they saw it mentioned while we were at the beach. Hope everyone enjoys them!
